- 1 avocado, pit removed, halved
- Sea Salt, to taste
- 1 cup cherry tomatoes, halved
- 1 tbsp. fresh lemon juice
- 1 tbsp. extra virgin olive oil
- 2 cups arugula or greens of choice
- 2 thick slices whole grain bread, toasted or grilled
- 2 tbsps. light feta cheese
- Sea Salt and Fresh Ground Pepper, to taste
- Coarsely mash avocado in a small bowl, add salt and pepper to taste.
- Spread mashed acocado over toast.
- Whisk lemon and olive oil in a medium bowl.
- Add greens and tomatoes to bowl, toss to coat.
- Top avocado with salad and divide feta between toasts.
- Sprinkle with sea salt and fresh ground pepper to taste.
